Toledo, Ohio-based Marco’s Pizza and Baton Rouge, La.-based Raising Cane’s Chicken Fingers have both re-engineered their operations since the economy began its downward spiral but it’s McAlister’s Deli that’s ahead of the trend: President Phil Friedman said his chain was already in the process of re-engineering the concept even before the economy turned. McAlister’s new prototype, which opened in Columbus, Miss., is an evolution, he said.
